Quick & Spicy Brussels Sprouts with Lemon

Brussels sprouts are a nutritious and delicious vegetable that can be prepared in a variety of ways. This simple recipe calls for just a few ingredients and takes only 15 minutes to make.

To start, trim and halve the Brussels sprouts lengthwise, or quarter them if they're large. Place them in a microwave-safe bowl with a tablespoon of water and microwave on High for about 3 minutes, until they are bright green but still crisp. Drain the sprouts and pat them dry with a paper towel.

Next, heat some extra-virgin olive oil in a large nonstick skillet over medium-high heat. Once the oil is shimmering, add the drained sprouts, along with salt and crushed red pepper.

Toss everything together to coat the sprouts in oil. Then, place the sprouts cut-side down in the skillet and let them cook undisturbed for 2 to 3 minutes, until they are nicely browned. Stir the sprouts and continue cooking, stirring occasionally, until they are tender when pierced with a fork and evenly browned, which typically takes about 3 to 4 minutes more.

Finally, transfer the cooked sprouts to a platter and drizzle them with lemon juice. Sprinkle some lemon zest over the top for an extra burst of flavor.
