Ingredients:
1 cup of unsalted roasted cashews
6 ounces of dark chocolate (60-70%), chopped
A pinch of flaky sea salt
Directions:
1. Line a 24-cup mini muffin tin with liners. Divide the cashews evenly among the prepared cups (approximately 4 cashews per cup).
2. Place the dark chocolate in a medium microwave-safe bowl and microwave on Medium for 1 minute. Stir, then continue microwaving in 20-second intervals until melted, stirring after each interval.
3. Spoon about 1 teaspoon of melted chocolate over each portion of cashews. Sprinkle with salt evenly.
4. Refrigerate until set, approximately 30 minutes.
