Soufflé Espresso Martini


Make a delicious and refreshing Whipped Coffee Martini in just 20 minutes. This vegetarian and gluten-free recipe serves 2.

To make this martini, you will need 1/4 cup instant coffee, 2 tablespoons granulated sugar, 1/4 cup boiling water, 2 large egg whites (pasteurized eggs recommended), 1 teaspoon cocoa powder, ice, 2 ounces coffee liqueur, 2 ounces freshly brewed espresso (1/4 cup), 1 ounce vodka, and 6 coffee beans for garnish (optional).

Start by combining instant coffee and sugar in a heatproof medium bowl. Add boiling water and beat with an electric mixer on high speed until the mixture becomes thick and fluffy, around 3 minutes.


Then, add the egg whites and cocoa and continue beating on high speed until the mixture holds its shape, about 5 minutes.

Divide the whipped coffee mixture between 2 coupe glasses and flatten the tops.

Next, half-fill a cocktail shaker with ice and add coffee liqueur, espresso, and vodka. Cover the shaker and shake until chilled. Pour the mixture through the middle of the whipped coffee in the glasses, allowing it to rise.

For garnish, place 3 coffee beans on the foam of each cocktail if desired.

If you're concerned about consuming raw eggs, look for pasteurized in-shell eggs in the refrigerated section of the grocery store.
