Ingredients:

- 1 (14.5-ounce) can of fire-roasted diced tomatoes without salt, undrained

- 3/4 cup of rinsed canned black beans without salt

- 3/4 cup of frozen bell pepper and onion mix

- 3/4 cup of frozen corn

- 1 cup of shredded rotisserie chicken breast

- 1 tablespoon of taco seasoning

- 2 1/4 cups of reduced-sodium chicken broth, divided

- 6 tablespoons of tortilla strips, divided

Directions:

1. Divide the tomatoes evenly among 3 (1-pint) canning jars or microwaveable airtight containers.

2. Top each jar with 1/4 cup of black beans, 1/4 cup of pepper and onion mix, 1/4 cup of corn, and 1/3 cup of chicken.

3. Sprinkle 1 teaspoon of taco seasoning into each jar.

4. Cover the jars and refrigerate for up to 3 days.

To prepare 1 jar of soup:

1. Add 3/4 cup of broth to the jar.

2. Microwave the jar, uncovered, on High in 1-minute increments, stirring between each, until steaming hot. This will take about 2 to 3 minutes in total.

3. Let the soup cool for 5 minutes.

4. Top with 2 tablespoons of tortilla strips before serving.

To make ahead:

1. Follow Steps 1-4.

2. Refrigerate the covered jars for up to 3 days.
