Ingredients:
- 3 tbsp extra-virgin olive oil, divided
- 1 tsp garlic powder
- 4 oz whole-grain country bread, cubed
- 2 tbsp lemon juice
- 2 tbsp mayonnaise
- 1 tsp Dijon mustard
- 1 small clove garlic, grated
- 3/4 tsp anchovy paste (optional)
- 1/8 tsp salt
- Pepper, to taste
- 6 cups chopped napa cabbage
- 1/3 cup shaved Parmesan cheese
Instructions:
1. Preheat oven to 350°F.
2. Mix 1 1/2 tbsp oil and garlic powder in a bowl. Add bread cubes, toss to coat, and bake on a baking sheet until browned and crisp.
3. In a large bowl, whisk lemon juice, remaining oil, mayonnaise, mustard, garlic, anchovy paste (optional), salt, and pepper. Add cabbage and Parmesan, toss to coat.
4. Serve the cabbage topped with croutons.
