Creamy Chicken Pasta with Brussels Sprouts & Artichokes

This recipe is perfect for a healthy and delicious meal in just 30 minutes. Here are the ingredients you will need:

- 8 ounces of whole-wheat fettuccine

- 1/2 cup of unsalted chicken broth

- 4 ounces of cream cheese

- 1 teaspoon of grated garlic

- 3/4 teaspoon of salt

- 1 1/2 tablespoons of extra-virgin olive oil

- 10 ounces of Brussels sprouts, trimmed and shaved (about 4 cups)

- 1 medium shallot, thinly sliced

- 1/2 teaspoon of crushed red pepper

- 1/4 cup of dry white wine (such as sauvignon blanc)

- 3 cups of chopped or shredded cooked chicken breast

- 1 cup of frozen artichoke hearts, thawed and quartered

- 2 tablespoons of lemon juice

- 1/4 cup of torn fresh basil leaves plus 2 tablespoons, divided

To start, bring a large pot of water to a boil and cook the fettuccine according to the package directions. Drain the pasta, but make sure to reserve 1 cup of the cooking water.

While the fettuccine is cooking, whisk together the chicken broth, cream cheese, garlic, and salt in a medium bowl until the cream cheese is in small, pea-sized chunks.

In a large skillet, heat the olive oil over medium-high heat. Add the Brussels sprouts, shallot, and crushed red pepper. Cook, stirring often, until the Brussels sprouts are bright green and slightly softened, which should take about 2 to 3 minutes.

Then, add the white wine and cook until most of the liquid has evaporated.

Next, add the broth mixture to the skillet and stir constantly until the cream cheese is melted and the mixture comes to a light simmer. Reduce the heat to medium and continue to cook, stirring occasionally, until the sauce has thickened.

Now, add the chicken, artichoke hearts, cooked fettuccine, and 1/2 cup of the reserved cooking water to the skillet. Toss everything together, adding the remaining 1/2 cup of cooking water a splash at a time, until the fettuccine is coated in sauce. This should take about 2 minutes. Remove from heat and stir in the lemon juice and 1/4 cup of basil.

Serve the dish, and top with the remaining 2 tablespoons of basil.
