Healthy Recipe for Chicken Thighs with Cauliflower Rice
Ingredients:
- 1/2 cup heavy cream
- 1/4 cup reduced-sodium chicken broth
- 2 tablespoons chopped fresh parsley, plus more for garnish
- 2 tablespoons softened cream cheese
- 2 teaspoons jarred minced garlic
- 1 1/2 teaspoons Dijon mustard
- 1 teaspoon champagne vinegar
- 1/2 teaspoon salt
- 1 package fresh riced cauliflower
- 1 package sliced cremini mushrooms
- 1/2 cup chopped yellow onion
- 4 skin-on chicken thighs
- 2 tablespoons extra-virgin olive oil
- 1/2 teaspoon garlic powder
- 1/2 teaspoon ground paprika
- 1/4 teaspoon ground pepper
Instructions:
1. Preheat oven to 450°F.
2. In a large ovenproof skillet, whisk together cream, broth, parsley, cream cheese, garlic, mustard, vinegar, and 1/4 teaspoon salt until smooth.
3. Add riced cauliflower, mushrooms, and onion to the skillet and stir well.
4. Place chicken thighs on top, skin-side up, about 2 inches apart. Drizzle with oil and sprinkle with garlic powder, paprika, pepper, and the remaining salt.
5. Bake for 35-40 minutes until chicken reaches an internal temperature of 165°F and vegetables are tender.
6. Before serving, gently stir the vegetable mixture and garnish with additional parsley, if desired.
