Ingredients:
1 small head of green cabbage (approximately 2 pounds)
2 tablespoons of extra-virgin olive oil
2 tablespoons of balsamic vinegar
1/2 teaspoon of ground pepper, divided
1/4 teaspoon of salt
1/2 cup of grated Parmesan cheese
2 teaspoons of finely chopped fresh flat-leaf parsley, plus extra for garnish
1 teaspoon of finely chopped fresh thyme
1/4 teaspoon of paprika
1/4 teaspoon of garlic powder
4 teaspoons of balsamic glaze (optional)
Directions:
Preheat oven to 425°F and position the rack in the lower third. Line a large baking sheet with foil.
Trim the cabbage, removing outer leaves and slicing into 4 (1-inch-thick) steaks.
In a small bowl, combine olive oil, balsamic vinegar, 1/4 teaspoon of pepper, and salt. Brush this mixture over both sides of the cabbage steaks and place them on the baking sheet.
Roast for about 25 minutes until browned, rotating the pan halfway through.
Mix Parmesan, parsley, thyme, paprika, garlic powder, and remaining pepper in a bowl.
Remove the baking sheet from the oven, flip the cabbage steaks, and sprinkle the Parmesan mixture on top.
Roast for an additional 10-12 minutes until tender and golden brown, rotating the sheet halfway.
Drizzle with balsamic glaze and garnish with parsley before serving.
