Ingredients:
1 tablespoon of blackberry jam
1 teaspoon of whole-grain mustard
1/2 teaspoon of finely chopped fresh rosemary
2 slices of whole-grain sandwich bread, preferably country-style
3 slices of Brie cheese (2 ounces)
Cooking spray
Directions:
1. Combine jam, mustard, and rosemary in a small bowl.
2. Spread the mixture evenly on one side of one bread slice.
3. Top with Brie slices and the second bread slice.
4. Coat a small nonstick skillet with cooking spray and heat over medium-low heat.
5. Coat the outsides of both bread slices with cooking spray.
6. Place the sandwich in the skillet, cover, and cook until the bottom is golden, about 3 minutes.
7. Flip the sandwich, cover, and cook until golden on the bottom and the cheese has melted, 2 to 3 minutes more.
