The dressing can be made ahead and refrigerated for 4 days, but note that the garlic flavor will intensify. The chicken can also be marinated overnight.
Ingredients:
1 1/2 teaspoons Dijon mustard, divided
1 teaspoon grated garlic, divided
1/4 teaspoon ground pepper, divided
8 ounces chicken tenders
4 tablespoons extra-virgin olive oil, divided
1/2 cup whole-milk plain strained (Greek-style) yogurt
5 tablespoons grated Parmesan cheese, divided
1 teaspoon lower-sodium Worcestershire sauce
1/2 teaspoon anchovy paste
1/4 teaspoon lemon juice
4 cups chopped romaine lettuce hearts
1/2 cup Caesar-seasoned croutons
Directions: Mix 1 teaspoon mustard, 1/2 teaspoon garlic, and 1/8 teaspoon pepper in a bowl; add chicken and coat evenly.
Heat 1 tablespoon oil in a skillet and cook chicken until golden brown. Let rest and slice.
Whisk yogurt, Parmesan, Worcestershire, anchovy paste, lemon juice, and remaining ingredients in a bowl. Add lettuce and toss.
Divide salad onto plates, top with croutons and chicken, sprinkle with Parmesan. To make ahead, marinate chicken and refrigerate dressing.
