Ingredients:
- 1/2 cup of plain Greek-style yogurt
- 1/4 cup of crumbled feta cheese
- 2 tablespoons of finely chopped sun-dried tomatoes packed in oil
- 1 tablespoon of dried oregano
- 2 teaspoons of grated lemon zest
- 1/2 teaspoon of garlic powder
- 1/2 teaspoon of crushed red pepper
- 1/4 teaspoon of ground pepper
- 2 cups of shredded rotisserie chicken
- 4 (10-inch) whole wheat tortillas
- 4 cups of fresh baby spinach
Instructions:
1. In a large bowl, stir together the yogurt, feta cheese, sun-dried tomatoes, oregano, lemon zest, garlic powder, crushed red pepper, and ground pepper until smooth.
2. Add the shredded chicken to the yogurt mixture and mix until well coated.
3. Lay out the tortillas on a surface and place 1 cup of spinach and about 1/2 cup of the chicken mixture in a line in the center of each tortilla.
4. Fold the bottom edge and side edges over the filling, then roll up burrito-style.
5. Cut the wraps in half and serve.
